2 Tablespoons honey (or maple syrup)
1 egg
1 teaspoon pure vanilla extract
1 ½ cup quick cooking oats

½ cup chocolate chips or other add ins like shredded coconut

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, mash the overripe bananas until smooth.
- Add the honey (or maple syrup), egg, and vanilla extract to the mashed bananas, and mix well.
- In another bowl, combine the quick cooking oats, ground cinnamon, and fine sea salt.
- Gradually mix the dry ingredients into the wet ingredients until well combined.
- Fold in the chocolate chips or your choice of add-ins.
- Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 15-20 minutes, or until the cookies are golden brown on the edges.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For added flavor, consider using different mix-ins like nuts or seeds. Store in an airtight container for up to a week.
