1 egg

1 ½ cup quick cooking oats

½ cup chocolate chips or other add ins like shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, mash the overripe bananas until smooth.
  3. Add the honey (or maple syrup), egg, and vanilla extract to the mashed bananas, and mix well.
  4. In another bowl, combine the quick cooking oats, ground cinnamon, and fine sea salt.
  5. Gradually mix the dry ingredients into the wet ingredients until well combined.
  6. Fold in the chocolate chips or your choice of add-ins.
  7. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 15-20 minutes, or until the cookies are golden brown on the edges.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
