Ingredients

For the Cowboy Butter:

½ cup (1 stick) unsalted butter

4 garlic cloves, minced

1 tablespoon Dijon mustard

1 teaspoon smoked paprika

½ teaspoon red pepper flakes (adjust to heat preference)

Juice of ½ lemon

1 tablespoon chopped fresh parsley

1 tablespoon chopped fresh chives (optional)

Salt & pepper to taste

For the Chicken & Pasta:

2 large chicken breasts, sliced into strips

2 tablespoons olive oil

Salt & pepper to taste

8 oz linguine pasta

½ cup heavy cream

¼ cup grated Parmesan cheese (optional but recommended)


Instructions

  1. Cook the Linguine:
    Bring a large pot of salted water to a boil. Cook linguine according to package directions until al dente. Reserve ½ cup pasta water, then drain and set aside.

  2. Sear the Chicken:
    While pasta cooks, season chicken strips with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook for 5–7 minutes, until golden and cooked through. Remove and set aside.

  3. Make Cowboy Butter Sauce:
    In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant (about 1 minute). Stir in Dijon, paprika, red pepper flakes, lemon juice, parsley, and chives. Season with salt and pepper.

  4. Make it Creamy:
    Stir in heavy cream and Parmesan cheese (if using). Let it simmer for 2 minutes until slightly thickened.

  5. Assemble the Pasta:
    Add cooked linguine and seared chicken back to the skillet. Toss everything in the cowboy butter sauce, adding a splash of reserved pasta water as needed to loosen the sauce.

  6. Serve:
    Garnish with extra herbs and Parmesan. Serve hot with lemon wedges if desired.

Notes

  • Substitute chicken with shrimp or steak strips for a twist.

  • Add sautéed spinach or sun-dried tomatoes for extra veggies.
