Ingredients

1 cup arborio rice

2 tbsp butter

1/2 onion, chopped

2 cloves garlic, minced

1/2 cup white wine

4 cups vegetable broth (warm)

2 cups sliced mushrooms (shiitake + cremini)

1/3 cup grated Parmesan

1/4 cup heavy cream (optional)

Fresh thyme, salt, pepper to taste


Instructions

  1. Sauté onions and garlic in butter.
  2. Add mushrooms and cook until soft.
  3. Stir in rice, toast 1 min.
  4. Add wine and cook until absorbed.
  5. Gradually add broth, stirring constantly.
  6. When rice is tender, stir in Parmesan, cream, and thyme.
  7. Season and serve hot.

Notes

Avoid adding all the broth at onceit stops the rice from getting creamy. Add it slowly and stir often for the best texture.
