  • Salt and freshly ground black pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 1 tbsp butter (for extra richness)
  • For the Creamy Tuscan Sauce:
  • 3 cloves garlic, minced
  • 1 cup heavy cream (or full-fat coconut cream for dairy-free)
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped sun-dried tomatoes (oil-packed, drained)
  • 2 cups fresh spinach (roughly chopped)
  • 1 tsp dried basil (or 1 tbsp fresh)
  • 1/4 tsp red pepper flakes (optional)

Instructions

  • Pat chicken dry with paper towels.
  • Season with salt, pepper, garlic powder, and Italian seasoning.
  • Heat olive oil and butter in a skillet over medium-high heat.
  • Add chicken and sear for 5–6 minutes on each side until golden brown and cooked through (internal temp: 165°F/74°C). Remove and set aside.

Step 2: Make the Creamy Tuscan Sauce

  • In the same skillet, add garlic and sauté for 1 minute until fragrant.
  • Pour in chicken broth and scrape any browned bits from the pan (for flavor).
  • Stir in heavy cream, Parmesan, sun-dried tomatoes, basil, and pepper flakes.
  • Simmer for 2–3 minutes until slightly thickened.

Step 3: Add Spinach and Finish

  • Add chopped spinach and stir until wilted (about 1 minute).
  • Return chicken to the pan and spoon sauce over it.
  • Simmer on low heat for another 3–5 minutes to let flavors meld.
