- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- 1 tbsp butter (for extra richness)
- For the Creamy Tuscan Sauce:
- 3 cloves garlic, minced
- 1 cup heavy cream (or full-fat coconut cream for dairy-free)
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/2 cup chopped sun-dried tomatoes (oil-packed, drained)
- 2 cups fresh spinach (roughly chopped)
- 1 tsp dried basil (or 1 tbsp fresh)
- 1/4 tsp red pepper flakes (optional)
Instructions
- Pat chicken dry with paper towels.
- Season with salt, pepper, garlic powder, and Italian seasoning.
- Heat olive oil and butter in a skillet over medium-high heat.
- Add chicken and sear for 5–6 minutes on each side until golden brown and cooked through (internal temp: 165°F/74°C). Remove and set aside.
Step 2: Make the Creamy Tuscan Sauce
- In the same skillet, add garlic and sauté for 1 minute until fragrant.
- Pour in chicken broth and scrape any browned bits from the pan (for flavor).
- Stir in heavy cream, Parmesan, sun-dried tomatoes, basil, and pepper flakes.
- Simmer for 2–3 minutes until slightly thickened.
Step 3: Add Spinach and Finish
