1 large egg

2 tablespoons chopped fresh parsley or dill

Instructions
- Grate the zucchinis and sprinkle with salt. Let sit for about 10 minutes to release excess moisture, then squeeze out the liquid.
- In a mixing bowl, combine the grated zucchini, egg, gluten-free flour, Parmesan cheese, garlic, black pepper, paprika or chili powder, and parsley or dill. Mix well.
- In a skillet, heat olive oil over medium heat. Form the zucchini mixture into small patties and cook in the skillet for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the skillet and place on a paper towel to absorb excess oil. Serve hot with your favorite dipping sauce.
Notes
For a crispier texture, ensure to squeeze out as much moisture from the zucchini as possible. You can also bake them instead of frying for a healthier option.
