Instructions

  1. Grate the zucchinis and sprinkle with salt. Let sit for about 10 minutes to release excess moisture, then squeeze out the liquid.
  2. In a mixing bowl, combine the grated zucchini, egg, gluten-free flour, Parmesan cheese, garlic, black pepper, paprika or chili powder, and parsley or dill. Mix well.
