Ingredients
1 cucumber, peeled, fork-scored, and diced
1½ cups cherry tomatoes, quartered
8 oz fresh mozzarella (pearl or cubed)
½ large red onion, finely chopped
Optional: Fresh basil leaves for garnish
For the Marinade:
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 tablespoon dried oregano
1 tablespoon dried basil (or fresh)
Pinch of salt
Pinch of black pepper
Instructions
- Prepare the Marinade.
- Chop the Vegetables.
- Add Mozzarella.
- Dress and Toss.
