This Cucumber Caprese Salad is a vibrant and refreshing twist on the classic Italian Caprese. Made with juicy cherry tomatoes, creamy mozzarella, crisp cucumber, and a zesty herb-infused balsamic marinade, it’s the perfect healthy side dish or light meal. Ingredients

1 cucumber, peeled, fork-scored, and diced

1½ cups cherry tomatoes, quartered

8 oz fresh mozzarella (pearl or cubed)

½ large red onion, finely chopped

Optional: Fresh basil leaves for garnish

For the Marinade:

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 tablespoon dried oregano

1 tablespoon dried basil (or fresh)

Pinch of salt

Pinch of black pepper


Instructions

  1. Prepare the Marinade.
  2. Chop the Vegetables.
  3. Add Mozzarella.
  4. Dress and Toss.
  5. Marinate and Serve.
