Ingredients

1 cup rolled oats or quick oats

1/2 cup peanut butter or allergy friendly sub

1/4 cup pure maple syrup or honey or agave

1 tbsp chia seeds

1/8 tsp salt

optional handful mini chocolate chips or raisins


Instructions

  1. In a large bowl, combine the rolled oats, peanut butter, maple syrup, chia seeds, and salt.
  2. Mix until well combined, then fold in the optional chocolate chips or raisins if desired.
  3. Scoop out tablespoon-sized portions and roll them into balls.
  4. Place the energy balls on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to allow them to set.
