Ingredients

95 g (¾ cups) plain (all-purpose) flour

2 tablespoons cocoa powder

1 teaspoon baking powder

¼ teaspoon salt

225 g (1 ¼ cups) dark chocolate

chopped

56 g (¼ cups) butter

salted or unsalted

2 eggs *room temperature

100 g (¾ cups) caster or granulated sugar

90 g (½ cups) Demerara or raw sugar

1 teaspoon vanilla

85 g (½ cups) dark or milk chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a mixing bowl, sift together the flour, cocoa powder, baking powder, and salt.
  3. In a saucepan, melt the dark chocolate and butter over low heat, stirring until smooth. Remove from heat and let cool slightly.
  4. In a separate bowl, whisk the eggs with the caster sugar and Demerara sugar until well combined and frothy.
  5. Add the melted chocolate mixture and vanilla to the egg mixture and stir until fully incorporated.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
  7. Pour the batter into the prepared baking pan, spreading it evenly.
  8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted comes out with a few moist crumbs.
  9. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing.

Notes

For extra chewiness, do not overbake. You can substitute Demerara sugar with brown sugar for a similar flavor.
