95 g (¾ cups) plain (all-purpose) flour
2 tablespoons cocoa powder
1 teaspoon baking powder
¼ teaspoon salt
225 g (1 ¼ cups) dark chocolate
chopped
56 g (¼ cups) butter
salted or unsalted
2 eggs *room temperature
100 g (¾ cups) caster or granulated sugar
90 g (½ cups) Demerara or raw sugar

85 g (½ cups) dark or milk chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
- In a mixing bowl, sift together the flour, cocoa powder, baking powder, and salt.
- In a saucepan, melt the dark chocolate and butter over low heat, stirring until smooth. Remove from heat and let cool slightly.
- In a separate bowl, whisk the eggs with the caster sugar and Demerara sugar until well combined and frothy.
- Add the melted chocolate mixture and vanilla to the egg mixture and stir until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
- Pour the batter into the prepared baking pan, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted comes out with a few moist crumbs.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing.
Notes
For extra chewiness, do not overbake. You can substitute Demerara sugar with brown sugar for a similar flavor.
