Ingredients

2 cups semi-sweet chocolate chips divided

3/4 cup granulated sugar

1/2 cup light corn syrup

1/4 cup water

1 egg white room temperature

1/8 teaspoon salt

1/2 cup creamy peanut butter

salted peanuts

1 cup salted peanuts

11 oz. bag of caramels

1/4 cup heavy cream


Instructions

  1. In a saucepan, combine granulated sugar, corn syrup, and water. Cook over medium heat until it reaches a boil, stirring occasionally.
  2. Once boiling, allow the mixture to boil without stirring until it reaches a soft-ball stage (around 240°F or 115°C).
  3. Remove from heat and let cool slightly. In a large mixing bowl, beat the egg white and salt until stiff peaks form. Gradually fold in the warm sugar mixture.
  4. Add creamy peanut butter to the mixture, followed by 1 cup of salted peanuts. Stir until well combined.
  5. Press the peanut mixture into an 8×8 inch baking dish lined with parchment paper, creating an even layer.
  6. In another saucepan, melt caramels and heavy cream together over low heat until smooth. Pour over the peanut layer and spread evenly.
  7. Melt the remaining chocolate chips and pour over the caramel layer. Spread evenly and let cool completely before cutting into bars.

Notes

For a firmer texture, chill the bars in the refrigerator before cutting. Store in an airtight container for up to a week.
