Description
Indulge in these rich and chewy Homemade Snickers Bars that combine layers of creamy peanut butter, crunchy salted peanuts, and smooth caramel, all enveloped in a luscious chocolate coating.
Ingredients
Scale
2 cups semi-sweet chocolate chips divided
3/4 cup granulated sugar
1/2 cup light corn syrup
1/4 cup water
1 egg white room temperature
1/8 teaspoon salt
1/2 cup creamy peanut butter
salted peanuts
1 cup salted peanuts
11 oz. bag of caramels
1/4 cup heavy cream
Instructions
- In a saucepan, combine granulated sugar, corn syrup, and water. Cook over medium heat until it reaches a boil, stirring occasionally.
- Once boiling, allow the mixture to boil without stirring until it reaches a soft-ball stage (around 240°F or 115°C).
- Remove from heat and let cool slightly. In a large mixing bowl, beat the egg white and salt until stiff peaks form. Gradually fold in the warm sugar mixture.
- Add creamy peanut butter to the mixture, followed by 1 cup of salted peanuts. Stir until well combined.
- Press the peanut mixture into an 8×8 inch baking dish lined with parchment paper, creating an even layer.
- In another saucepan, melt caramels and heavy cream together over low heat until smooth. Pour over the peanut layer and spread evenly.
- Melt the remaining chocolate chips and pour over the caramel layer. Spread evenly and let cool completely before cutting into bars.
Notes
For a firmer texture, chill the bars in the refrigerator before cutting. Store in an airtight container for up to a week.
