1 cup cherry tomatoes

1 bell pepper

1 onion

1 lemon (juice and zest)
¼ cup olive oil
2 teaspoons dried oregano
1 teaspoon salt
½ teaspoon black pepper
Fresh parsley

Instructions
- Preheat the oven to 400°F (200°C).
- In a large baking dish, arrange the fish fillets at the bottom.
- In a bowl, combine cherry tomatoes, zucchini, bell pepper, onion, and garlic.
- Drizzle with olive oil, lemon juice, lemon zest, oregano, salt, and pepper. Toss to coat evenly.
- Spread the vegetable mixture over the fish fillets.
- Bake for 25-30 minutes or until the fish is cooked through and flakes easily with a fork.
- Garnish with fresh parsley before serving.
Notes
For a more intense flavor, marinate the fish in lemon juice and oregano for 30 minutes before baking.
