1.25 lbs boneless skinless chicken thighs

2 Tbsp cooking oil

1 yellow onion, diced

1 cup long-grain white rice

1.75 cups vegetable broth

1 Tbsp chopped parsley (optional)


Instructions

  1. Mix spices and coat chicken.
  2. Sear chicken in 1 Tbsp oil until browned.
  3. Remove chicken. Add 1 Tbsp oil and sauté onion.
  4. Toast rice for 1–2 mins. Add broth and stir.
  5. Place chicken on top. Cover and bring to a boil.
  6. Simmer on low for 20 mins. Let rest 5 mins.
  7. Fluff rice and garnish with parsley. Serve.
