Ingredients
2 tsp paprika
1 tsp dried oregano
1 tsp dried thyme
½ tsp garlic powder
½ tsp onion powder
¼ tsp salt
¼ tsp pepper
1.25 lbs boneless skinless chicken thighs
2 Tbsp cooking oil
1 yellow onion, diced
1 cup long-grain white rice
1.75 cups vegetable broth
1 Tbsp chopped parsley (optional)
Instructions
- Mix spices and coat chicken.
- Sear chicken in 1 Tbsp oil until browned.
- Remove chicken. Add 1 Tbsp oil and sauté onion.
- Toast rice for 1–2 mins. Add broth and stir.
- Place chicken on top. Cover and bring to a boil.
- Simmer on low for 20 mins. Let rest 5 mins.
- Fluff rice and garnish with parsley. Serve.
