6 oz pecorino romano cheese semi-aged
6 oz guanciale or pancetta
½ cup white wine
11 oz spaghetti or tonnarelli
Instructions
- In a large pot, bring salted water to a boil and cook the spaghetti or tonnarelli according to package instructions until al dente.
- In a pan over medium heat, cook the guanciale or pancetta until crispy. Add the white wine and cook for a few minutes until reduced slightly.
- Drain the pasta, reserving some of the cooking water. Add the pasta to the pan with the guanciale and toss to combine.
- Add grated pecorino romano and a bit of reserved pasta water to create a creamy sauce, mixing until everything is well combined.
- Finish with freshly ground black pepper and serve immediately.
