Salad:

⅔ cup sliced or slivered almonds

3 tablespoons sugar

10 ounces arugula greens

8 ounces strawberries, hulled and quartered

1 avocado, chopped

2 ounces goat cheese, crumbled

⅓ cup roasted salted pistachios, chopped

Champagne Vinaigrette:

3 tablespoons champagne vinegar

½ lemon, juiced

2 tablespoons honey

1 teaspoon dijon mustard

1 garlic clove, freshly grated

Pinch kosher salt & pepper

½ cup olive oil


Instructions

  1. Make the Sugared Almonds:
    In a nonstick skillet over medium heat, stir almonds with sugar until caramelized (6–8 minutes). Transfer to parchment, cool, and break apart.

  2. Toss the Salad:
    In a large bowl, combine arugula, strawberries, avocado, goat cheese, pistachios, and sugared almonds. Season lightly with salt and pepper.

  3. Make the Vinaigrette:
    Whisk champagne vinegar, lemon juice, honey, dijon, garlic, salt, and pepper. Stream in olive oil while whisking until emulsified.

  4. Dress & Serve:
    Drizzle vinaigrette over salad just before serving. Toss gently and enjoy immediately.
